We install with NM-B 14/2 and 12/2 for general branch circuits inside the house, 10/2 or 10/3 for 30A dedicated circuits, 6/3 or 4/3 SER for ranges and feeders. Outbuilding feeders run in UF cable direct-buried at NEC 300.5 depth (typically 24 in below grade), or in PVC conduit where mechanical protection is needed. The detached building gets its own NEC 225 disconnect, its own grounding electrode system per NEC 250.32, and an isolated neutral bus in the sub-panel. Voltage drop is calculated for the run length because driveway runs to a shop are often 150 to 250 ft.

Permits are filed at the parish AHJ. The inspector wants to see boxes and rough wiring before drywall or insulation closes, so we coordinate the rough inspection between framing and finish.
